O'Charley's Loaded Potato Soup

One of mine and Joel's favorite past-times is going to O'Charley's for their loaded potato soup, so when I found a copycat recipe for it, I just had to try it!!!


This delicious soup has become a classic. It is comforting but also reminds me of how much he loved this place, especially this time of year around football season before visiting with friends to watch a game.


Bonus because this is great frozen and kept to thaw for later!


Loaded Baked Potato Soup

A delicious kitchen staple for fall- a copy-cat O'Charley's Loaded Potato Soup recipe!


Ingredients

3 lbs red potatoes

1⁄4 cup butter

1⁄4 cup flour

8 cups half-and-half

16 oz Velveeta cheese, melted

1 tsp ground white pepper

1 tsp garlic powder

1 tsp hot sauce

1⁄2 lb bacon, fried crisp

1 cup cheddar cheese, shredded

1⁄2 cup fresh chives, chopped

1⁄2 cup fresh parsley, chopped


Instructions

  1. Dice unpeeled red potatoes into small cubes and place them in a large pot of water and bring to a boil. Let them cook for about 10 minutes, just until they’re mostly tender.

  2. In another pan, melt butter and whisk in flour until smooth. Keep the heat low and slowly stir in half-and-half, mixing constantly until it starts to thicken.

  3. Add the melted Velveeta and stir until creamy.

  4. Drain the potatoes and add them to the cheese mixture. Season with pepper, garlic powder, and a dash of hot sauce.

  5. Cover and let it simmer on low for 30 minutes, giving it a stir now and then.

  6. Serve hot and top with crumbled bacon, shredded cheese, chives, and parsley. Cozy comfort in a bowl!
