30-Minute Chicken and Biscuit Pot Pie – Cozy and Comforting Weeknight Meal

What if I told you that the ultimate comfort food could be made in just 30 minutes? This isn’t your average pot pie—it’s faster, simpler, and every bit as delicious.

When busy weeknights call for something cozy and satisfying, this 30-Minute Chicken and Biscuit Pot Pie is here to save the day. With tender chicken, a creamy thyme-infused filling, and golden biscuits baked right on top, this dish combines the hearty comfort of a pot pie with the ease of a one-pot recipe. Ready in no time, it’s perfect for fall evenings or whenever you crave a little warmth around the table.




Ingredients: 1 TBSP of butter

1/2 small yellow onion

1 can (10.5 ounces) Condensed Cream of Chicken Soup

1 1/4 cups milk

1/2 teaspoon dried thyme

2 cups frozen mixed vegetables of your liking (carrots, green beans, corn, peas)

2 cups shredded roasted chicken

5 unbaked refrigerated biscuits (about 10 ounce package biscuit dough), cut in quarters

Instructions:

  1. Preheat oven to 400°F.

  2. Heat butter and onions over medium until they are translucent in a 10-inch ovenproof skillet.

  3. Stir in the soup, milk, thyme, vegetables and chicken. Season with salt and pepper. Heat over medium-high heat to a boil, stirring often.

  4. Place the biscuits on top of the mixture.

  5. Bake for 15 minutes or until the biscuits are golden brown and done.



Notes:

If you prep the chicken ahead of time, like we do for meal prep it makes this dinner so much faster! If not, I just toss a few breasts in the air fryer on roast, chop it with the food processor and voila! For me, it’s easier than grabbing a rotisserie chicken and de-boning it.
